Me too! The only thing I find rewarding about the whole thing is if it actually tastes good. I would much rather have a clean, beautiful house, and outsource the cooking part. So I always am on the hunt for EASY recipes. Basically, throw it all in there and turn the oven on.
Well, I tried a new recipe tonight- AND. It turned out pretty good. Here is the recipe, and my two cents of how I will do it next time to make it better.
FIESTA CHICKEN CASSEROLE- 8 servings
Prep: 15 minutes
Bake: 40 minutes (had to cook mine a little longer)
1 package of pie crusts (2 crusts, I used publix brand)
1 16 oz. jar of Chunky Salsa (be sure to use chunky, and I probably won’t put the whole jar in next time)
1 can of cream of chicken soup (publix brand again)
1 cup of sour cream
2 cups of shredded cheese
1 package (24 oz.) frozen corn (I think I will use drained canned corn next time and probably only 2 cans)
2 cans (9.75 oz. each) chunk can chicken (as much as I am into easy, next time I will boil two chicken breasts and shred them)
1 can (15 oz.) black beans, rinsed and drained
1. Heat the oven to 400 F.
2.Stir the salsa, soup, sour cream, cheese, corn, chicken and beans in a large bowl. Spoon the chicken mixture into 13x9x2 baking dish
3. Lay crust over mixture, don’t over lap if you can help it.
4. Bake for 40 minutes or until crust is golden brown.
That sounds deeeeeeeeelicious. I think I'm gonna try it!
